There are times when it is not possible to get to the grocery store. The reasons are many: the store is closed, the car is being serviced, your energy is zapped and you don’t want to go out, you are waiting for payday, it’s December 24, etc.
Most people are so used to “running to the store” anytime they want something that maybe it’s time to change that pattern. Do you HAVE to have milk NOW? Can you eat your cereal with water or juice? Can you mix the dry cereal with peanut butter and add some raisins? Do you have to have the cereal in the first place? Just be creative.
I challenge you to not go to the food store for a few days or even a week. Pretend you are stuck in a blizzard ( but with electricity and all the other comforts of home). You can make use of Google to find recipes for ingredients you have in the fridge or pantry.
So if you are curious what I made today, keep reading. I was quite busy:
- cabbage soup: frozen cabbage I had in the freezer, a can of tomato paste in the pantry, salt, water
- cucumber apple smoothie: a cucumber, an apple, and water
- challah: flour, yeast, sugar, salt, water, oil, and an egg
- avocado pudding-4 versions (I got really creative here):
version 1: avocado, date paste, cocoa, and water
version 2: avocado, dates, cocoa, and water
version 3: avocado, agave syrup, cocoa, and water
version 4: avocado, cherry jelly, cocoa, pureed rice, ground flax seeds, and water
(I had children begging for it quicker than I could make it.)
- sauteed tuna with leftover rice, sunflower kernels, ground flax seeds, 1 egg
- mashed potatoes
- creamy cucumber avocado soup: cucumbers, avocado, onion, garlic, spices, water: Here is the link: http://www.eatingwell.com/recipes/creamy_cucumber_soup.html (I skipped chicken broth and used water and didn’t use yogurt)
- white beans (dried) and an onion-still cooking in the crock pot and will be ready for tomorrow
So there’s the peek into my culinary efforts for today. You can probably guess that I had cucumbers and avocados to use up. Nothing fancy, yet tasty and gluten-free as well.
