This week was the first “normal” week after a month of holidays. Neither my husband nor I wanted to do any middle of the week food shopping because we were 1) tired and didn’t feel like it 2) wanted to use up leftovers and 3) didn’t want to spend any more money until it was Shopping Day, which is Thursday.
I always love a challenge using ingredients we have in the house. Most of the recipes were vegan-ish. I try to take photos of what I Kreate but that doesn’t always happen for a variety of reasons.
Menu items included: Homemade Pita. Recipe found in Spice & Spirit cookbook.
Orange Soup. Carrots, sweet potato, potato, butternut squash, and onion.
Cucumber Smoothie. Cucumbers and apple syrup. (no photo)
Cholent Stuffed Peppers. Red peppers stuffed with rice and leftover cholent from Shabbos (NOT vegan-ish)
Tortillas. Filled with sauteed onions, greens, and rice. (no photo)
Popcorn. Popped on the stove top. (no photo)
Rice Cereal Energy Bar. Puffed rice cereal, pumpkin seeds, raisins, dried cranberries, pumpkin seeds, chia seeds, chocolate chips, dates, a little sugar, and one egg.
Oatmeal. Topped with brown sugar and cinnamon. (no photo)
Vegetable Soup. Carrots, potatoes, Sweet Potatoes, and Onion. I drank most of the broth and mixed the vegetables with rice and buckwheat (no photo).
